The app holds a full local copy. Admissions and payments carry on through a dead connection, then sync in order when the internet comes back.

A real desktop application, not a browser tab - fast on the modest computer that is actually on your front desk.
Encrypted on the device
The local database is encrypted at rest and tied to the computer’s user account. Medical answers live in a separate restricted sheet.

Add the second desk or the owner’s laptop as additional licences. They all read and write the same data through your own backend.
